Los Dos Potrillos Denver

Denver, Colorado
From Vacant to Vibrant: A Denver Homecoming Story

Located at the intersection of Colorado Boulevard and Interstate 25, the new Los Dos Portrillos brings the beloved family-owned restaurant into Denver for the first time. MOA ARCHITECTURE partnered with the Ramirez Hospitality Group to transform a long-vacant, heavily vandalized space into a vibrant, brand-forward dining experience that reflects the heart and soul of the Los Dos story. As the sixth location in the group’s growing portfolio, this project marks a meaningful “homecoming” for the Ramirez family, whose roots trace back to the Denver area.

Scope

  • Renovation
Spacious restaurant interior with wood‑beam ceilings, mixed booth and table seating, and diners gathered around tables.
Restaurant bar area with tiled counter, high-top seating, and patrons enjoying drinks.

We loved working with everyone. MOA was able to render different design options and send them over, which really made decisions a lot easier. The whole process was seamless and professional.

Crafted by Culture and Built on Family

The design was shaped by the Ramirez family’s commitment to authenticity, hospitality, and culture. From the beginning, they envisioned a space that felt warm, welcoming, and distinctly theirs — a reflection of the food they serve and the family legacy behind it.

One of the earliest design priorities was placing the tortilla station front and center, allowing guests to see fresh tortillas being made as they walk in. The team leaned into vibrant finishes, traditional materials, and handcrafted details, working directly with artisans and craftsmen in Guadalajara, Mexico to create custom light fixtures, furniture, and metalwork. Through an iterative process of 3D modeling and on-site walkthroughs, MOA collaborated closely with the family to ensure every detail aligned with their story and their brand.

Turning a Forgotten Space into a Family Landmark

The finished restaurant blends tradition with modern comfort. The reconfigured layout features an open, guest-friendly reception area, a lively bar and lounge for those waiting to be seated, and layered interior finishes that balance rustic textures with contemporary touches.

What was once a dark, damaged space is now a vibrant neighborhood destination — filled with warmth, energy, and authenticity. The new Los Dos Potrillos location not only reflects the spirit of the Ramirez family, but creates a memorable dining experience that welcomes guests in, one fresh tortilla at a time.
